Description
Come and discover the French pastry basics with our teaching Chefs at the heart of the Ritz’ Paris kitchens!

We have designed a program to have you discover the all-time classics, with a nice touch of modernity.


The techniques that will be taught during the course:

• Lining a tart shell and preparing a tart
• Preparing some shortbread doughs and cannele batters
• Assembling individual layered mousse cakes
• Making Swiss roll sponge cakes and learning techniques to assemble Swiss rolls
• Kneading a brioche dough
• Working with fresh fruit
• Preparing some crunch recipes
• Preparing some caramel and praline paste


The recipes that will be made:

• Raspberry and lychee tart
• Giant chocolate cookie
• Chocolate cannelés
• Chocolate and tropical fruit 'lunch' cake
• Pineapple, rice pudding and thai basil tartlets
• Pistachio Swiss roll
• Orange bostock


Lunch not included, break from 12.00 to 1 PM.

Trainees will be awarded a certificate at the end of each training course.

Sessions will only be held if at least 4 students are signed up.
